    Hello Terry,

    We spoke awhile ago via your thread on Tuesday nights about recipe contributions for a D-Tox cookbook. Here is one of my contributions :-) This is a traditional recipe from my roots in Pakistan, I hope you enjoy!


    2-3 tbsp ghee
    1 medium onion, sliced
    1 medium tomato, chopped
    1″ piece of ginger, minced
    4-5 cloves of garlic, minced
    1.5 medium eggplant, chopped into 1/2″ pieces
    2 tsp ground cumin
    1/2 tsp garam masala
    1 tsp ground turmeric
    1/8-1/4 tsp cayenne pepper(depending on heat desired)
    1/2 tsp sea salt
    cilantro, for topping

    Melt ghee in a deep saucepan. Add sliced onion and cook on medium heat until nicely browned. Add chopped tomatoes, and cook until mixture resembles a sauce(add a little water as needed). Turn heat to low and add ginger and garlic and continue to cook until soft. Add spices and salt. Stir. Add chopped eggplant and cook on medium-low heat until eggplant is thoroughly cooked(add 1/8 cup water or more if needed).

    Top with chopped cilantro, and serve over brown basmati, millet, or quinoa. Yum!

      Looks great. We might be a bit too late as we did the final proof for the cookbook today and it is going to the press, but we can share it here and in other place for people to enjoy.

        Oh, that’s disappointing! I was really looking forward to a chance to have a recipe in the D-Tox cookbook. It’s been ready for awhile, but thought I had time to submit it since you were away on holiday. Oh well, serves me right for putting it off!
        Thanks for the oppurtunity though Terry, and looking forward to seeing the revised menus…perhaps there will be another opportunity to submit a recipe in the future?
